Charleston, S.C. - The Restoration Hotel is pleased to announce the addition of its new Food and Beverage Director at The Watch: Rooftop Kitchen and Spirits, Daniel Nightengale. With this new position, he will instill his passion for the Holy City food and beverage scene into The Watch: Rooftop Kitchen & Spirit, starting with new menu items. Patrons can indulge in new offerings such as Chardonnay Mussels, a Spicy Fried Chicken Sandwich, reinvented Watch Burger, and a towering Tiramisu Crepe Cake.
Growing up primarily in Pennsylvania, Daniel spent a lot of time helping his mother in the kitchen. Whether they were making cookies or peeling carrots, Daniel was there to lend a hand, especially as his passion for culinary arts started to come to life. He started working in restaurants as a teenager learning the tricks of the trade and eventually attending Culinary Institute of America and Ohio State University that led him to become Executive Sous Chef of Bubby’s in Tribeca where he embodied the southern way of cooking.
Following his time at Bubby’s with the southern hospitality engrained, he carried his career to Rouge Tomate and then The Smith working his way up to Executive Chef in less than 2 years. Daniel credits The Smith as to where he learned a lot of his positive management attributes, where he supervised 85 cooks, prep cooks, and dishwashers in the kitchen where he strived to make them feel like family.
Now Daniel resides in Charleston, South Carolina where he is excited to showcase his talents along with other chefs, brewers, and farmers. He explains, “My favorite thing about the Holy City is its locality. There are Distilleries, breweries, and farms all within a very close radius that each excel at what they do. I am excited to have the opportunity to bring my talents here and especially at The Restoration.”
His favorite thing about working at The Restoration is the culture and people that The Restoration attracts. Everyone is particularly nice, understanding, and approachable, and shares a positive mindset of how tasks should be executed. When it comes to changing the menu, he was most excited about changing The Watch Burger recipe, serving duck wings instead of chicken wings, and making The Restoration’s own parmesan gnocchi.
